Buku Palado (Aglaia sp.), Forest Plants Alternative Food Source
Abstract
Indonesia as an agrarian country should have the ability to develop an agroindustry
system that does not rely on imported materials such as rice and wheat. Food
diversification could be a quite rational alternative solution to the fulfilment of food
needs, particularly carbohydrate sources. Carbohydrates are the most varied and
abundant organic compounds compared to other natural organic compounds. The main
sources of carbohydrates are cereals (wheat, corn, rice, and sorghum), grains (red beans,
soy beans, and green beans), tubers (cassava, sweet potato, and potato), fruits,
vegetables, etc. These types of foods contain carbohydrates in the form of starch. The
main contents of starch are amylose and amylopectin, of which the composition varies
in each type and source of starch. According to Waterschoot et al. (2015), the world’s
starch production in 2012 was 75 million tons and its main sources were corn, cassava,
wheat, and potatoes.
