Diversification of Processed Foxtail Millet (Setaria italica L.) as a Functional Food Based on Local Wisdom

Abstract

Millete specially the foxtail millet variety (Setaria italica L.) is one of the
important commodities for the people of Polewali Mandar Regency, West
Sulawesi Province, Indonesia. In addition to supporting the realization of food
security for local communities, it is also a source of high enough nutrients and
has a function as functional food that is beneficial to health. The existence of
millet or local people call it "Tarreang" has a symbolic meaning and meaning
behind its use. For example, during events in the month of Muharram, the
birthday of the Prophet Muhammad, weddings, the birth of a baby and the
completion of a child after learning the Qur'an. The purpose of this paper is to
explain the benefits of millet, especially foxtail millet as a functional food and
to describe how people in Polewali Mandar Regency process various kinds of
traditional foods from foxtail millet raw materials based on local wisdom. The
method used in this paper is a search from various libraries, then described in
the form of tables and figures, then narrated according to the object discussed.
The results of this review show that the development of millet, especially the
foxtail millet variety, is not only an important commodity for the people of
Polewali Mandar Regency but also an important commodity for the whole
world. The existence of millet, apart from being a source of staple food to
realize local community food security, also has a high nutritional content and
has several bioactive compounds that can prevent various diseases and can
support body health. Furthermore, millet for people in Polewali Mandar
Regency has historical meanings that have been passed down from generation
to generation, namely symbolic meanings and meanings, especially in
religious activities and certain cultures based on local wisdom.
